For the fruity omelet, separate eggs. Beat egg whites until stiff, adding sugar as you go. Stir in yolks and vanilla sugar, dice fruit and mix in.

Preheat oven to 200°C. Line a baking tray with baking paper. Put the mixture into a piping bag and pipe onto the baking tray.

Bake in the oven until golden brown. Sprinkle the still hot fruity omelette with powdered sugar and serve immediately.
