For the caramel cupcakes with salted caramel frosting, first preheat the oven to 180 °C convection oven. Line a muffin tray with paper cups or use silicone molds.

For the batter, cream the softened butter with the sugar and salt for about 8 minutes. Beat in vanilla pulp and eggs, one at a time. Stir in the flour and baking powder and stir in the whipped cream. Pour the mixture into the ramekins and bake for about 25 minutes. Test with chopsticks. Let cool.

For the frosting, melt the butter, brown sugar and whipping cream together in a saucepan. Bring to a boil, stirring, and simmer for a few minutes. Let cool for 15 minutes and then stir in the powdered sugar and sea salt in two parts. If the mixture is a little too dry, add a little more cream.

Garnish the cupcakes with the frosting and toffees and serve the caramel cupcakes with salted caramel frosting.
