For the quinoa-carrot soup, finely chop the onion. Wash the carrots and grate coarsely.

Melt the butter in a saucepan and sauté the onions until translucent. Add the carrots and the quinoa and sauté briefly. Pour in the soup and season with cumin and ground coriander. Simmer on low heat for 15 minutes and season with salt and pepper. Sprinkle the quinoa-carrot soup with chopped parsley before serving.
