clear soup to bubble up. Stir eggs with Parmesan cheese, finely chop chives. Turn down the heat and add the egg and cheese mixture and wine to the clear soup, stirring throughout. Season the soup with salt and freshly ground pepper to taste, pour into a large enough bowl and sprinkle with chives.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried ones.
