For wholemeal speculaas, mix spelt flour, sea salt and spices and place on work surface. Make a well in the center, add egg yolks, chopped butter, grated almonds and honey and quickly knead everything together into a smooth dough.
Roll out the dough on a floured work surface to a thickness of 5 mm and cut out cookies.
Place the wholemeal speculoos on a greased baking tray and bake at 175 °C for about 10 min.
