Heat butter in a frying pan and sear turkey steaks for about 2 minutes on each side. Remove from pan, season with salt and pepper and keep warm. Add white wine and grapes to the roast stock and allow the liquid to reduce slightly. Stir in Madeira, put the steaks back in and heat briefly.
