For the gingerbread, mix the ingredients into a dough. Let the dough stand and rest in a cool place for at least one night.
Preheat the oven to 170 °C before further processing. Cover a baking tray with baking paper.
Roll out the dough to a dough sheet 1/2 cm thick. Cut out round gingerbread cookies from the dough sheet with the help of a large cup.
Bake the gingerbread in the oven until brown on both sides. Let cool and glaze each with chocolate or lemon icing as desired.
