Remove the peel from the carrots and dice to two millimeters. Finely chop the chives. Put the coarsely diced meat and onions through the finest wheel of the meat grinder. Remove crusts from bread and briefly soak in a mixture of half skim milk, half tap water. Squeeze well. Mix minced meat with egg, bread, carrots, herbs and spices. Leave the mixture to stand in the cold for a good hour.
Cut washed zucchin! into four-millimeter slices. Sauté in hot oil, season lightly with salt and cover with lid until crispy, about four to six min. Season with less thyme leaves than chives.
Arrange minced mixture into small hamburgers. Sprinkle a little flour around them. Fry in hot oil or butter on both sides for about four minutes until crisp. Put in an open oven at 80 °C for a few minutes. Offer in combination with the zucchini.
