For the punch essence, wash all citrus fruits hot and squeeze. Halve the vanilla bean and scrape out the pith. Place the juice, spices, pith and halved vanilla bean in a large saucepan with the rock candy. Stir through and cover and let stand overnight. Then boil for 10 minutes until simmering. Remove from heat and pour in the cherry rum. Strain through a sieve and bottle while still warm.
