For the balsamic chicken, heat 1 tablespoon olive oil. Put in rosemary sprigs, fry chicken breast cut into strips, salted and peppered, in it until hot and keep warm.
Leave rosemary in the pan. Heat second tbsp olive oil in the same pan, fry onion until golden brown and add chicken again.
Add honey to pan and let everything caramelize slightly together, then deglaze with balsamic. Season with salt and pepper to taste.
