Cut the peeled vegetables into tender strips using a vegetable slicer, mix well. Heat the clarified butter in a frying pan. Pour in the vegetable strips and roast on both sides until golden, season with salt and pepper.

When the rösti is ready, add the butter and the kitchen herbs and glaze the rösti with them. Serve with the smoked salmon, perhaps with crème fraîche.

Our tip: Always use fresh chives if possible!
