Put the flour and semolina in a large bowl or in a mixer. Start mixing slowly with the mixer or the machine, using the beaters, not the dough hooks!
Then quickly add the eggs and olive oil, mixing faster. Add a little salt. The mixture has the right consistency when small crumbs have formed.
Prepare the crumbs in a pasta machine to form a firm ball of dough.
Place the dough ball in plastic wrap to prevent it from drying out and let it rest for an hour.
Then, using the pasta machine, make tagliatelle (narrow ribbon pasta) as usual.
Either cook the tagliatelle immediately or let them dry.
