Look forward to this fine asparagus recipe:
Prepare macaroni in salted water until crisp. Remove the peel from the asparagus spears, cut them into 5 cm long pieces and also prepare them in salted water until half-cooked.
Make a light roux with butter and flour, extinguish with asparagus water, season with juice of one lemon and pepper, add egg yolk.
Fold in stiff snow, add grated cheese and asparagus spears to the sauce, cut ham into strips.
Put macaroni, ham and asparagus in layers in a greased gratin dish, put asparagus on top, sprinkle with grated cheese and breadcrumbs and finally put butter flakes on top.
Bake at medium heat for half an hour. Serve with chopped lettuce.
