For the roast veal in the roasting tube, wash the meat, dry it and season it properly with salt. Fill the roasting tube with wine, onions, garlic, pepper and pimento seeds, close it tightly and marinate everything together in the refrigerator for about 24 hours.

Open the roasting tube, pour the marinade through a sieve and collect it, put the meat back into the roasting tube.

Preheat oven to 175 degrees Celsius.

Add the chopped vegetables to the roasting tube. Season everything with pepper, paprika and basil. Close the roasting tube again and put it on a baking tray. Poke a few holes in the foil with a fork.

Steam the meat in the oven for about an hour. Cut a hole in the roasting tube and pour the liquid into a saucepan.

Reduce the roast stock slightly and thicken with crème fraîche. Remove the meat and vegetables from the tube, arrange on plates and serve the roast veal in the roasting tube with the gravy.

Tip: As an alternative to the fresh basil, you can also use the freeze-dried.
