Sift wheat flour into a suitable bowl, mix with yeast, grated lemon peel, saffron powder and cinnamon. Add the egg, butter, milk and sugar to the flour-herb mixture and knead with the dough hook of a hand mixer for about 5 minutes on the lowest and then on the highest speed until the dough is smooth.
Knead in the sorted raisins and let the dough rise with the lid closed in a warm place for about 30 min. Roll out to a thickness of 1 1/2 cm, form gingerbread men, shape the arm contours using a knife.
Form small rolls and cords from the leftover dough and decorate the gingerbread men as desired.
Put clay pipes under the left arm of the gingerbread men and leave the gingerbread men to rise repeatedly in a warm place.
Mix the egg yolks, remove half of them and mix with cocoa powder or possibly cinnamon. Coat the gingerbread men differently with the egg yolks as well as the egg yolk mixture.
Press raisins into the dough as eyes, sticks of almonds as mouth and nose and halved almonds as buttons.
Place the gingerbread men on a baking sheet lined with parchment paper. Place in the preheated oven and bake at 180 to 200 °C for about 20 minutes.
