Clean, rinse and pick lettuce into bite-sized pieces. Rinse pears, cut in half, quarter and remove the core. Cut into long wedges and drizzle with a little juice of one lemon.
Mix remaining juice and zest with horseradish and yogurt. Season with salt and pepper. Rinse lemon balm, chop finely and mix into dressing. Mix all ingredients together and dress.
Tip: Use plain or light yogurt as needed!
