Clean strawberries, if necessary, briefly rinse and drain thoroughly. De-husk, then cut into quarters or even eighths with a small kitchen knife, depending on size. Work over a baking dish to catch all the juices. Then sprinkle the strawberries with a spoonful or two of sugar. Sprinkle with a little orange or lemon juice of your choice – orange, lemon or strawberry liqueur goes just as well -, gently turn over and steep briefly. Either spoon pure from dessert bowls or bring to the table with an ice cream of your choice.
In addition, you can season to your heart’s content, with herbs, e.g. basil or mint, which go excellently and amazingly with the strawberry aroma, as well as with green pepper – but please only with fresh pepper, which you can always buy in the Asian store, in no case take the one preserved in an acidic brine! Ideal is a concentrated balsamic, for example an apple balsamic with its fine acidity and intense fruit.
Drink: A red wine Imperial from Burgenland or possibly a Moscato d’Asti, which can also be used for marinating, goes well with this.
Our tip: It is best to use fresh herbs for a particularly good aroma!
