Rinse cauliflower, divide into roses and steam in a little salted water with lid closed until tender in about 12 min.
Hard egg in about 10 min. Stir mineral water, salt, vinegar, pepper, nutmeg and sweetener. Beat in the oil.
Cut the ham into small pieces. Drain the cauliflower and mix with the marinade while still warm. Let stand for a while. Sprinkle with chives.
Peel and dice the egg. Serve with the lettuce. Serve with bread.
