For the lady’s caprices, knead the ingredients into a smooth dough and let rest in a cool place for 2 hours. For the topping, whip the egg whites until stiff and add the sugar, stirring constantly. Also chill for 1 hour.
Divide the dough in half and roll out each half thinly to the size of a baking tray – this works best on a floured work surface and if you place baking paper on top.
Prick several times with a fork and bake in a preheated oven at 180° for about 10 minutes until light. Immediately spread a thin layer of jam on the hot dough and spread half of the glaze on each. Cut into sticks (approx. 1.5 x 4.5 cm) with a sharp knife – keep dipping the knife in water.
Place the stangles on a baking tray lined with baking paper, staggering them a little. Then bake the ladies’ caprices at 160° for about 9 minutes. The glaze must not take color, it must remain white.
