For the country bread, mix the flour with the salt in a bowl and make a well in the center. Crumble in the yeast and add the sugar. Pour a little lukewarm water over it and stir.
Cover and let rise in a warm place for about 15 minutes. Add the sourdough and the remaining water and knead well (about 10 minutes).
Now cover the bread dough again and let it rise in a warm place for about 1/2 hour. Knead the dough well again and form it into an oblong loaf.
Place it on a floured baking sheet and let it rise for another 1/2 hour. Now brush the bread with a little water and make several incisions with a sharp knife.
Put an ovenproof dish with water in the oven and preheat it to 220 °C. Bake the bread in it for 10 minutes. Bake the bread in it for 10 minutes, then turn the temperature down to 200 °C and finish the bread in about 1 hour.
