Mix the meat mixture with water and chopped onion according to package instructions and swell. Rinse the radicchio. Pluck the leaves into bite-sized pieces. Have ready a marinade of 2 tbsp. oil, salt, pepper, vinegar and sugar. Next, rinse the chives and cut into fine rolls. Preheat electric oven to 225 °C.
Remove peel from apples, cut into 8 rings, carefully remove the cores. Form 8 fritters from the dough. Fry in hot oil in a large frying pan until done on both sides, place on a baking tray. Fry the apple slices briefly in the remaining pan fat, then spread evenly over the fritters. Cover each with half a slice of cheese. Bake in the oven for 5 min (gas:level 4).
Turn the leaf salad in the marinade to the other side, sprinkle with chives and bring to the table with the fritters.
Tip: As an alternative to the fresh chives, you can also use the freeze-dried.
