A simple but delicious cake recipe:
Beat the egg whites with water and salt until very thick and stir in the yolks. Mix the cinnamon, rusks, hazelnuts, baking powder and rum and gently fold into the egg mixture. Line a cake springform pan with parchment paper and pour in the batter. Bake it for 25 min at 180 °C -200 °C.
Leave the cake in the turned off kitchen stove for another 10 min, then remove it from the pan and cool it down for one night. Cut the cake once. Whip the cream with sugar and cream stiffener. Melt the coffee powder in a little hot water and fold it into the whipped cream together with the walnuts. Fill the cake with the mixture and decorate.
