Instructions:

Wash the figs and cut them into small pieces with the peel. Bring to the boil with apple juice and tarragon sprig, then remove the sprig and then puree.

Mix this puree with the preserving sugar and cook according to instructions on the preserving sugar package.

Pour into small, very clean twistoff jars.
