Farmer Casserole with Beans

Remove the skin from the onion and chop finely. Sauté in butter until soft. Add minced meat and stew for ten minutes.

Blanch (scald) the tomatoes, skin and halve. Remove seeds. Cut tomatoes into eighths. Add to meat with drained beans. Season heartily with tomato ketchup, paprika and salt.

Cook the mashed potatoes according to package directions. Fill half of it into a buttered baking dish, cover with the meat mixture. Spread the remaining mash evenly on top. Sprinkle with freshly grated Gouda and bake in the oven at 200 degrees for 15-20 minutes until the cheese has melted and the casserole has a golden crust.

If desired, sprinkle with finely chopped herbs before serving.

Serve with green leaf salad.
