Mix flour, salt and yeast in a baking bowl. Add butter and milk, knead into a soft, smooth dough. Cover and let rise at room temperature until doubled, about one hour.
Shape: Roll out dough to 1 cm thickness, cut out rounds (2 per cheeseburger) ten cm in diameter, place on a baking sheet lined with parchment paper. Let rise for another thirty minutes. Brush dough rondelles with water and turn to other side in sesame seed, place back on baking sheet. Bake: Twenty min. in the middle of the oven heated to 200 degrees. Remove, cool slightly on a rack.
Burger: Mix mince with all ingredients up to and including paprika well in a baking bowl, knead briefly by hand.
Shape: Rinse a round cookie cutter (approx. 10 cm ø) after it has cooled, lightly flour the inside, place on a board that has also been lightly floured. Divide meat mixture into portions (2 per cheeseburger), shape one unit into the cookie cutter. using the back of a damp spoon, press in evenly and smooth out, carefully remove cookie cutter. Shape remaining portions on the spot.
Fry: Heat oil in a frying pan, carefully place burgers in batches in the pan with the frying scoop, fry for about three minutes, turn to the other side, place a slice of cheese on top of each, finish frying for about three minutes. Remove burgers, keep warm.
Garnish, filling: Mix tomato ketchup, mayo and cayenne pepper to make a sauce.
