For the snow hood:


Preheat the oven to 180 °C hot air. Line a baking tray with baking paper.

Wash the rhubarb and cut into 2-3 cm thick pieces.

Mix the butter, sugar, vanilla sugar, eggs, egg yolks, flour, cornstarch and baking powder together with a whisk to form a dough.

Spread the batter on the prepared baking sheet and spread the rhubarb pieces on top. Bake the cake for about 25 minutes.

Meanwhile, for the whipped topping, beat the egg whites until stiff and fold in the sugar and lemon juice. Spread on the pre-baked cake and bake it for another 15-20 minutes.

Let the cake cool before serving.
