Instructions:

Use homemade strudel dough or ready-made strudel dough for the blueberry and topped strudel.

For the filling, whisk together egg yolks, Qimiq, powdered sugar, bourbon vanilla sugar, grated lemon zest, salt and cornstarch. Then stir in curd with a wooden spoon (do not use a mixer or the curd will lose stability). Finally, stir in the melted butter.

Spread the filling on the strudel dough and top with blueberries, fold and roll up and place on a baking tray lined with baking paper.

Brush the strudel with melted butter and bake for approx. 45 minutes at 180 °C until golden brown.
