In a heavy frying pan, heat half the butter. Brown the meat quickly on both sides, season with salt and pepper. Reduce the temperature. Mix potato flour and milk and add to the meat with the remaining butter, mix well and continue cooking as desired. Finally, stir mustard and juice of one lemon into the sauce. Serve with hand-cut French fries.

It goes well with a red Reserva from the Douro.
