Cut baby apples into quarters. Put on whipped cream, butter, sugar , honey and juice of a lemon, add the apple quarters and lightly roll to compote. Melt the Roquefort with whipped cream and a little bit of honey. Finally, place the apple compote with the Roquefort sauce on a plate and decorate with fresh mint.
