For the apricot muffins with cashews, first sprinkle apricots with juice of one lemon. Beat butter and sugar until creamy, beat in egg, then fold in apricot pieces.

Mix flour with salt, lemon zest, baking powder and mace, add to butter mixture alternately with milk. With the last unit of flour, fold in the cashews.

Divide batter evenly among muffin cups. Sprinkle muffins with a little sugar.

Bake the apricot muffins with cashews at 175 degrees for about 20 minutes.
