For the apple cider roast finely chop the onion, finely slice the garlic, separate the bacon from the rind and cut into fine strips.
Lightly pound the roast (it should be well-seasoned), season with salt and pepper.
Heat butter in a pan, sear meat on both sides, remove from pan and keep warm.
Sauté onion, garlic and bacon in the drippings, dust with flour and darken. Pour in apple cider and beef broth, return roast to pan, cover and simmer over low heat until tender.
When the apple cider roast is ready, it can be served with side dishes.
