A great cake recipe for any occasion:
Preheat the oven to 200 °C. Place the paper cups in the 12 wells of a muffin tray. Cut the cherries into small pieces, leaving a few whole and setting aside for garnish. Place the chopped cherries with 2 tbsp sugar in a baking dish form and stir so that they are completely coated with sugar.
Mix flour, remaining baking soda, sugar, baking powder and salt in a baking bowl until well blended. Melt the light butter, fold in the egg, sour cream and vanilla sugar. Fold in the flour mixture. Divide the batter evenly among the muffin cups, garnish with the remaining cherries and sprinkle with the brown sugar.
Bake the muffins in the oven on the middle rack for 20 minutes, until lightly browned. After baking, keep in the baking tray for another 10 min, then remove from the cavities and cool on a cooling rack.
Tip: Instead of fresh cherries, well drained ones from a jar can also be used. Decorate the muffins with icing if desired.
