For the spring potato pancakes, clean and wash vegetables. Coarsely grate everything except 2 radishes and 12 cucumber slices on a grater.

Mix curd and grated vegetables and season with salt and pepper. Peel, wash and coarsely grate the potatoes. Peel and finely dice onion.

Mix grated potatoes, diced onion, eggs, flour and 1/2 tsp salt in a bowl. Heat oil in a frying pan. Bake 8 golden brown potato pancakes from the potato dough and keep warm.

Spread the vegetable topping on 4 pancakes. Place remaining pancakes on top. Slice the rest of the radishes. Arrange pancakes with cucumber slices and radishes.

Sprinkle the spring potato pancakes with pepper.
