For the spelt-apple cake, separate the eggs, beat the yolks with sugar, vanilla sugar and rum until foamy. Slowly stir in oil and milk, beat with melted chocolate until fluffy.
Beat egg whites until stiff peaks form. Stir grated nuts and spelt flour with baking powder into the yolk mixture. Carefully fold in the snow. Fold in the grated apples and finely grated carrot.
Pour into a wetted and greased pan and bake in a preheated oven at 180 degrees for about 50 minutes.
