Melt the butter in a saucepan and fry the tripe well. Then add the shallots, raisins and cider, season with salt and pepper, cook well and continue to simmer at a moderate temperature for about 20 minutes. Remove the pot from the heat and add the egg yolks. The tripe is eaten with farmhouse bread or galettes.
