Bring cherries to a boil in a saucepan with water. Mix in a little binder, bring to a boil and season with a tiny bit of sweetener. Cool the compote.
Mix water, egg, milk (2), flour and salt until smooth. Allow to swell for approx. 10 min.
Heat fat in a frying pan. Pour in the dough and bake at low temperature until golden brown on both sides.
Cut the pancake into pieces with two forks and serve with the cherry compote.
