Stir the yogurt with the orange zest and half of the honey, then divide evenly among the dessert plates and refrigerate.
Melt the butter, add the pistachios, Brazil nuts and raisins and toast for 3 min while stirring.
Add the pears and roast for another 3 min until the pears are lightly cooked. Then fold in the apricots and orange juice and let it bubble up. Make everything together for about 2 min. stirring continuously to reduce the orange juice.
Then add the grapes and the remaining honey (if desired) and heat completely. Spoon the fruit-nut mixture onto the chilled yogurt form and bring to the table on the spot.
