For the sweet and sour zucchini, wash the zucchini and cut into 1/2 cm thick slices. Boil briefly in a decoction of diluted vinegar, sugar, spices and onion rings, strain and let cool. Boil the broth for another 1/4 hour, let cool, add the ginger and pour over the zucchini.
