Don’t worry about successfully feeding your friends at the next party: our ham roast will easily satisfy 30 guests. And you don’t have to spend the whole evening in the kitchen! A real party food – just make sure beforehand that the cooking pots and stove are big enough for the ham! Soak the ham in cold water for 24 hours the day before to desalt it. Pour away the water later. Put cold water on the ham so that it is completely covered and let it bubble up. Skim and add carrots with onion and leek, simmer on low heat. Calculate 1 hour for the first kilo and then 15 min for each additional 500 grams (8 kg = 3, 5 to 4 hours).

For the addition, make the cabbage in the “English way”, but the water should be very salted so that the cabbage flavor is not so intrusive. Fish out the savoy leaves after 2 min of cooking, rinse in iced water and drain.

Separate out the stem and cut the leaves into tender strips. Sauté in butter and simmer on low heat for 1 to 1.5 hours. Roast the pine nuts in a frying pan and add to the cabbage at the end.

Sauce: You can prepare the sauce while the ham is simmering: Cut the mushrooms into small cubes and sprinkle with lemon. This way they stay white and look pretty.
