For the zuppa pavese, toast the slices of white bread in hot butter until golden on both sides. Cover the bottom of a soup pot with it. Beat the eggs well and pour over the bread slices.
Sprinkle everything with Parmesan cheese and fill up with hot beef broth.
Bake the zuppa pavese in a preheated oven at 220 °C for about 10 minutes and serve hot.
