Mix flour and salt in a large baking bowl. Add the yeast mixed with a little water and the remaining water. Mix together with a wooden ladle to form a wet dough. The moister the dough is kept, the looser the rolls will be.

On a floured surface, knead the mixture for about 10 minutes to form an elastic dough. Stretch the dough with the heel of your hand and then fold it over. Of course, this is much easier with a food processor! Let the dough rise at room temperature with the lid closed until it has doubled in volume. This will take a good hour.

While the dough rests, lightly toast the sesame seeds (or poppy seeds) in a pan and place in a shallow dish.

Shape the dough into a square, cut it on two sides to form the rolls. Brush the surface with water and press the rolls into the plate with poppy or sesame seeds. Score crosswise, walk repeatedly.

Put in the oven heated to 240 degrees and bake for about 15 minutes.
