Beat the butter until creamy, add the yolks, the scraped vanilla pulp and the sugar, then fold in the flour and the whipped cream.

Add a pinch of salt. Let the dough rest and swell for half an hour.

Only just before baking, stir in the very stiffly beaten snow.

Bake the waffles in quick succession in a hot iron brushed with butter.
