For the Schupfnudeln with semolina first press cold peeled potatoes (best from the day before) through the potato press. Knead with flour, semolina, salt, nutmeg and egg to a dough.

Form a roll, cut the roll into large pieces on the spot. Roll the pieces into noodles between floured hands.

Place noodles in enough boiling salted water. When they rise to the surface, they are done (about 5 minutes). Drain Schupfnudeln with semolina and fry in butter until golden brown.
