From the cabbage trim the damaged leaves, wash, finely shave, remove the stem base and thick leaf veins, add the fat, drizzle with wine and stew over low heat with the lid closed until soft.

Rinse the plums, pour a little water, make and pass through a sieve. Rinse the lemons, scald, peel, dice and remove the seeds.

Heat the fat, mix with a little bit of flour, do not let it brown. Mix with the cabbage, plums and lemons and spices, steam for a few minutes until soft and season.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
