For the onion relish, peel and coarsely dice the onions. Halve the bell pepper, cut out the seeds and inner walls, wash and chop into cubes. Heat the oil in a saucepan and sauté the onion and bell pepper cubes.

Add salt, wine, vinegar, sugar and paprika powder and simmer on low heat for an hour with the lid closed.

Crush half of the green pepper with a flat kitchen knife, stir into the relish with the remaining whole green pepper and add mustard. Pour hot into jars and seal.

Serve the onion relish with cold roasts, poultry or fondue!
