For the lentil salad, peel and finely chop the onion, garlic and carrot. Strain the lentils, catch some lentil water and mix with onion, garlic and carrot.
Mix herbs, oil, honey and vinegar to make a dressing, marinate the salad, add salt and pepper and let it sit in the refrigerator for about 1 hour.
Season again to taste before serving. Cut grapes in half and mix in. Arrange on a plate and drape 2 sardines per serving on the lentil salad.
