A simple but delicious cake recipe:
Warm the honey or syrup with butter, sugar, salt and a soup spoon of water and melt. Pour into a wide dish and leave to cool. Stir the egg, cinnamon and baking oil into the almost cooled mixture with the whisk of a mixer on high speed. Combine and sift flour and baking powder, stirring 2/3 of it by tablespoonfuls on medium speed. Combine the batter with the rest of the flour on the surface until smooth. If it sticks, add a tiny bit more flour.
Roll out 2/3 of the dough on a greased baking tray (enough for 3/4 of a tray) and press up the sides a tiny bit. Roll out the rest of the dough into a blanket of the same size, put aside rolled up with paper.
Spread the dough on the baking sheet evenly with the jam, place the pastry blanket on top and prick it a few times with a fork.
Baking time : about 10 min. Electricity : 200-220 °C (preheated) Gas : level 3-4 (preheated) Hot air : 180-200 °C (not preheated)
For the icing, sift the powdered sugar and mix it with the juice of one lemon until it becomes thick. After baking, cover the honey cake with the icing and cut it into even strips (3 x 9 cm).
