Fillet oranges, cut fennel bulbs into tender strips and place in a large enough bowl. Marinate with the juice of one lemon – soak for 20 minutes. Then add olives and oranges and season with ground pepper and salt.

The leaf salad is an ideal accompaniment to fish, meat or a crusty baguette.
