For the bread dumpling salad with pumpkin seed oil, wash the lettuce and pluck into bite-sized pieces. Cut the tomatoes, peppers and eggs into thin slices, as well as the onion.
Spread the lettuce on a plate, on top put the finely sliced bread dumplings.
Top the dumplings with tomato, peppers and the eggs and finally marinate with salt, bell pepper, vinegar and pumpkin seed oil. Sprinkle with parsley.
