Beef Roulades with Apple Stuffing

Instructions:

1. season roulades with salt, season with pepper, cut out apples, cut into wedges, dice onions, chop parsley.

2. cover meat with ham, some apple slices and onion cubes as well as parsley, roll up, fix with spagat or possibly chopsticks.

3. brown the roulades with clarified butter. Cut tomatoes into quarters, add 2/3 of the remaining apples, diced onion and clear soup to meat and steam for at least 11/2 hours.

Remove roulades, blend sauce, add crème fraîche, season with salt, pepper and sugar. Add remaining apples and tomatoes, heat and serve with roulades.

Serve with parsley potatoes

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
